Research Interests
Interdisciplinary research group with development of new food processing technologies, physicochemical characterization of biopolymers, computer applications in food research, microbial stability and heat and mass transfer considerations as major research focus points. Utilization of food processing waste as raw materials for added-value products and new technologies for recovery of suspended solids in aqueous streams. Optical instrumentation for process control and food process engineering research. High hydrostatic pressure processing, moisture control, refrigeration, and thermal processing are technologies used in current research. Commodity areas of interest are dairy and seafood products.
