Natural Colorant from Potato Extract

Description:
A red-hue colorant that is substantially free of alkaloids and polyphenoloxidase, has good stability, minimal aroma, and no organic solvent residue is provided. The natural colorant has a red-hue equivalent to that of FD and C Red No. 40 and is more stable  than existing natural colorants.
Applications:
Use of red-fleshed potatoes as an environmentally-friendly, non-chemical, alternative  colorant
