Natural Antibrowning and Antioxidant Compositions and Methods for Making the Same

Description:
The invention discloses natural source compositions having consistent and effective antibrowning and antioxidant characteristics. The invention also provides methods for making the compositions disclosed. More specifically, the invention provides natural source browning and oxidizing inhibitor compounds comprising S-sinapyl-L-cysteine, L-y-glutamyl-S-sinapyl-L-cysteine, S-sinapyl glutathione, or various mixtures thereof. Methods for making such compositions from pineapple juice and/or from pineapple;processing plant waste streams include effective separation of the antioxidant compositions of the present invention from unwanted sugars, acids, phenolic compounds, and other undesirable compounds present in pineapple juice and/or pineapple processing plant waste streams.
Applications:
Effective consumer antioxidant products obtained from a natural source, methods for using pineapple waste streams as that source.
