Eat Right, Your Way, Every Day

The Nutrition and Dietetics Club teamed up with Be Well on March 5-6 for a two-day event in the Memorial Union Quad on campus.One of the event highlights was a stationary bike provided by the College of Public Health and Human Sciences that powered a blender and made smoothies during the event.  Games, prizes, free food, and tips on how to stay healthy from guests including Bob’s Red Mill, First Alternative Co-op, Wild Squirrel Nut Butters, and Food@OSU kept spirits high in spite of the dreary weather.

Life on the road: just got back from San Francisco where I had a great meeting with Nick Chertock. Now getting ready for my next week workshop at the Northwest Athletic Training Association in Boise, Idaho on how to assess and correct scapular dyskinesis - an evidence based approach. The next day I fly out to present on Movement Variability - Dynamic Systems and Beyond at the Northwest American College of Sports Medicine. Both of these implement motor control principles - the key to success as an exercise and healthcare provider. Without the understanding of motor control principles we merely become exercise programmers or copycats. Food for Thought, brought to you by the Oregon State Student Health Services Dietician Lynn Cordes, MS, RD, LD.

Perfect meal for a wet, chilly Corvallis spring day! Your body and taste buds will agree with only 120 calories and 2 grams of fat per cup and a whopping 5 grams of fiber and 25% of daily Vitamin C needs! Substitute cumin and chili powder for the taco seasoning to cut down on salt and add some cayenne pepper to give it some spice. Try freezing leftovers in single serving containers for microwave meals in minutes!

Food Hero Recipe

Ingredients

1 tablespoon vegetable oil
1 onion, chopped
2 zucchini, chopped
1 can (15.5 ounces) refried beans
1 can (28 ounces) diced tomatoes
1 can (28 ounces) crushed tomatoes
2 cans (15.5 ounces) corn
1 can (15.5 ounces) black beans, reduced sodium
2 tablespoons taco seasoning

Directions

Sauté onion and zucchini in oil until soft.
Add refried beans and stir to break up beans.
Add tomatoes, corn, black beans and taco seasoning.
Simmer over medium heat for about 30 minutes, stirring occasionally.
Refrigerate leftovers within 2 hours.

Notes

The more vegetables you add, the more nutrients! Try adding some of your favorites.
Freeze extra for another meal.

Studies have demonstrated that stability and motor control are altered in the presence of low back pain. Muscular responses within the trunk are rather volatile. Given these individual variations in muscle recruitment strategies, this study set out to determine whether such adaptations in muscle activation ultimately enhanced spinal stabilization; and whether individuals would adopt similar ‘signature’ patterns for tasks with different mechanical demands.

EMG recordings were obtained from various anterior and posterior trunk muscles amongst 17 healthy participants whilst performing trunk flexion and extension both in the presence and absence of experimentally induced pain. Both dependent variables increased during pain, however, no two individuals demonstrated identical muscle recruitment but utilized a similar strategy regardless of movement direction.

These results confirm that acute back pain enhances spinal stability (protection); however, the specific means by which individuals achieve this outcome is highly variable. Hodges et al.; Eur J Pain (2013).
