Carob Cake by John Donel
- 2 cups whole wheat pastry flour
- 4 tbsp. carob powder
- 1 tsp. baking soda
- 1 cup warm water
- 3/4 cup honey or maple syrup
- 5 tbsp. applesauce or 1 banana
- 1 tsp. vanilla
- 1 package Fleishmans active yeast (optional)
- 1 cup raisins (optional)
Combine dry ingredients and wet ingredients in two separate bowls. If using a banana, blend in food processor until it looks fluffy. For extra rise, mix yeast with 1/4 cup warm water, stir until thoroughly dissolved and then mix with wet ingredients. Mix wet and dry ingredients together and then add raisins if desired. Pour into 8-9 inch round or square pan and bake at 350 degrees for 35 minutes. Turn off oven and let sit in closed oven for another 5 minutes.
