The “Vegetables and herbs in oil” fact sheet (SP 50-701) has been revised.  As explained in the fact sheet, the revision was prompted by a recent article published in Food Protection Trends. Their conservative storage recommendations were particularly prompted by surveys showing that home refrigerators are often not cold enough to safely store vegetables and herbs in oil for long periods.  The authors advise that vegetables and herbs in oil mixtures should not be refrigerated longer than 4 days before using, discarding, or freezing.
